About The Position

We are seeking a Sous Chef to join the Dining Services team at St. Mary's University in Halifax, Nova Scotia. As the Sous Chef, you will report to the Executive Chef and be responsible for supporting the Executive Chef & Residence Dining Manager in providing culinary leadership in the planning, production, administration, and management of high-quality food services. Requirements

  • 3+ years’ experience in culinary field required.
  • 2+ years’ experience in leadership role required.
  • Strong relationship building skills with clients and customers.
  • Experience with food and labor costing
  • Professional, and positive with ability to lead in a busy environment.
  • Must be flexible, as evenings and weekends required.
  • Must be able to work independently with limited supervision.
  • Requires occasional lifting, carrying, pushing, pulling of up to 25 lbs.

  • Culinary degree or Red Seal an asset

Responsibilities

  • In the absence of the Executive Chef, plan, direct and guide culinary team in the execution of daily food service in a manner that meets and exceeds operational and financial targets, working alongside front line staff when necessary
  • Leads and monitors Cooks and Food Service Workers’ adherence to all Aramark operating standards and legislated standards within the component including company policy and procedure
  • Remain compliant to all OH&S policies, procedures and required activities -updated safety boards, inventory on First Aid Kits, proper chemical handling, monthly safety talks etc.)
  • Assists with onboarding, coaching, and developing culinary staff.
  • Assist with inventory and product ordering.
  • Standardizes production recipes to ensure consistent quality.
