The Sous Chef at Grand Cafe is responsible for continually evolving all outlet menus and staff skills, maintaining food and labor costs, and enforcing set standards. This role involves direct communication with sales and operations teams to exceed client standards and direct management of all culinary and stewarding staff. The Sous Chef must be able to perform all functions of the Executive Chef in their absence and assist in hiring, training, and supervising culinary staff. This position also requires menu development, client interaction for special events, vendor relationship management, quality control, and ensuring sanitation and safety standards are met. Additionally, the Sous Chef is responsible for employee scheduling, purchasing, employee discipline, and ensuring compliance with all food sanitation and safety regulations.
