About The Position

The Restaurant Sous Chef is responsible for the successful operation of the kitchen in the Moody Gardens Hotel, thus contributing to the overall success of Moody Gardens. The incumbent is authorized to take reasonable action necessary to carry out assigned duties and responsibilities, provided such action is consistent with position guidelines as outlined below. Position guidelines include, but are not limited to, established company and department policies and procedures and all supervisory directives. The incumbent is expected to exercise sound, reasonable judgment and initiative, and give high priority to accuracy and details in the performance of job responsibilities.

Requirements

  • Bachelor’s Degree in related field or 5 years of experience in a similar position
  • Ability to obtain any government required license or certificates
  • CPR certification or First Aid training preferred
  • Must obtain TABC & Food Handlers Certification prior to beginning work
  • Must be reliable and responsible
  • Ability to speak Spanish preferred
  • Ability to read, listen, and communicate in English both verbally and in writing
  • Basic math skills to understand measurements, requisition amounts, and portion sizes
  • Ability to operate kitchen appliances such as stoves, ovens, mixers, etc.

Responsibilities

  • Coordinate all food production needs and food presentation operations for the Cafe Kitchen
  • Ensure the production of high quality food for the Cafe Kitchen as well as all other food outlets of Moody Gardens
  • Maintain a high quality image through effective housekeeping, maintenance, and sanitation in areas of responsibility
  • Maintain and evaluate existing food concepts and the development of creative new food concepts which ensure the highest quality food and profitability
  • Operate within the budgeted guidelines, and maintain food cost percentages
  • Orienting new employees for which you are in charge and coordinate internal training and developmental programs when appropriate
  • Implement and support control procedures within the department
  • Staff kitchen to meet kitchen responsibilities
  • Ensure good safety practices of kitchen employees and assist in the maintenance of proper emergency and security procedures
  • Operate in compliance with all Local, State, and Federal laws and government regulations
  • Assist Executive Chef with kitchen operations and Banquets
  • Estimate daily production needs on a weekly basis and communicates production needs to kitchen personnel daily.
  • Supervise and coordinate activities of cooks and workers engaged in food preparation
  • Any and all other duties as assigned; duties are subject to change as management deems necessary to best serve the needs of Moody Gardens
