Responsibilities

  • Oversees and manages food preparation across kitchen stations; supervises BOH staff to ensure the consistent production of high-quality food
  • Adheres to established control procedures for cost and quality, including food production charts, par inventories, standardized recipes, use records, and food costing sheets; ensures all recipes are followed on a consistent basis
  • Maintains and implements daily food prep lists; prepares food orders in a timely manner to ensure proper stocking and meet demand
  • Monitors and checks the maintenance of all kitchen equipment daily; maintains and directs a quality sanitation program; assists with health department inspections
  • Manages the ordering of all food products; monitors and receives all ordered products and supplies, ensuring proper storage, temperature, and rotation in compliance with health department regulations
  • Conducts monthly inventory of food and other supplies; monitors budgeted food costs and assists in achieving budgetary objectives for the Food and Beverage Department; processes requisitions for supplies quickly and accurately
  • Maintains and evaluates existing food concepts; assists in the development of new menu items and recipes
  • Assigns duties to associates for efficient kitchen operation; trains and supervises associates in the proper preparation of menu items and operation of equipment; assists in developing ongoing training programs
  • Assists in interviewing, hiring, training, planning, assigning, and directing work; evaluating performance; rewarding and disciplining associates; addressing complaints and resolving problems
  • Assists in the management of department members that may include, but are not limited to: Cooks, Lead Cook, Pantry Cook, and Stewards
  • Incorporates safe work practices in all job performance
  • Maintains regular and reliable attendance; performs other duties as required
