The Sommelier is responsible for understanding the needs of the business on a daily basis and responding to those needs in a timely manner. This role involves maintaining full stock levels across various storage and customer-facing areas, including the third floor (storage cages, white wine fridge, cellar, BTB bar fridges), second floor (red wine fridge, BTB bar fridges), Grocer (bottle shop shelves, chiller, high top rounds, BTG wine cake stand), and P1 (restocking and filling receivables, general maintenance). On the restaurant floor, the Sommelier will participate in direct wine service to guests, making recommendations, being available, and adhering to hospitality and sommelier service standards in an elevated casual dining environment. This includes retrieving BTB wines for service staff, mastering all wine locations, assisting with POS maintenance, reporting discrepancies, and rectifying advertised prices. The Sommelier will also be responsible for reporting and red-dotting 86'd/sold out wine items, deactivating them from the POS, and informing the service team. In the Grocer section, responsibilities include regular stocking of shelves, ensuring wines are priced and can be rung in successfully using unique technology and the POS system, and assisting customers with recommendations or sales encouragement.
