The Prep person is tasked with the BOH operations to ensure our guests’ experience authentic BBQ and the exceptional hospitality Sonny’s is known for.

Requirements

  • Able to work independently and as part of a team.
  • Able to handle multiple tasks simultaneously.
  • Can be calm under pressure.
  • Efficient time management skills. Ability to follow instructions and procedures.
  • Able to work with and troubleshoot smokers and hot boxes.
  • Able to stand for long periods of time.
  • Able to work with sharp knives.
  • Must be 18 years of age.
  • Attend and successfully complete ongoing training or certification programs required by the company, federally, or by the state, as it relates to this position.
  • Must be able to handle food products and equipment.
  • Ability to communicate effectively with other team members, including listening.
  • The position requires continuous walking, standing, bending, lifting, reaching, crouching, touching, feeling, tasting, talking, hearing, wiping, and smelling.
  • Must be able to frequently lift and/or move up to 90 pounds.
  • Must be able to work in wet and/or humid conditions for cleaning tools, pots, and pans, and required to work with cleaning chemicals.
  • Frequent washing of the hands is required.
  • You must have the ability to perform the essential functions of the job for up to an 8-hour shift.

Responsibilities

  • Follow all policies and procedures to ensure all food is prepared and cooked to quality standards.
  • Make sure all cooked and uncooked products are rotated correctly.
  • Adhere to sanitary and food preparation guidelines. Ensure BOH is clean and sanitary.
  • Work with GM to monitor accurate pars for consistent and controlled truck ordering.
  • Assist in receiving all incoming products, check quality and quantity, and store in their proper place.
  • Execute all levels of Caterings, including our Tier 2/higher end caterings to standards.
  • Develop an understanding of food cost and how to troubleshoot when issues arise.
  • Develop an understanding of how to manage Actual vs. Theoretical food/inventory costs. How to identify ways to cut and/or measure waste.
  • Be a Brand Ambassador- share a passion for BBQ. Present a professional appearance and proper language when addressing guests, co-workers, and management.
  • Be able to train the BOH team members on proper cooking and reheating standards for the best quality product.
  • Communicate with management of challenges that may affect standards.
  • Collaborate with management on guest complaints and grievances with product issues.
  • Perform any other work-related duties specified by upper management.
