SUMMARY: Constantly observe GMP status of Peeling Room, Sauce Room, and Waste Room and correct any GMP problems as necessary, while performing on-going sanitation duties. Process raw slurry while maintaining appropriate temperature and brix to meet process needs and customer specifications. ESSENTIAL FUNCTIONS: All of the following are to be performed while adhering to Tree Top operational policies, safety rules, procedures and good manufacturing practices. It is the responsibility of every employee at Tree Top Inc. to report food safety and food quality problems or risks to personnel with the authority to initiate action against these said possible risks. The Organization chart indicated key personnel with the authority to take action. This is a representative sample--not to imply a complete listing of all responsibilities and tasks. Maintain GMPs Maintain general housekeeping of area Visually assess the area and ensure that GMPs are maintained Maintain a clean work area; keep floors swept, brooms, squeegees, etc.; in proper place; empty trash cans/bins as needed Respond to emergency clean-up as required Report any safety hazards Pick up debris and waste off of floor Rinse floor as required Unplug drains when necessary Clean and sanitize equipment on upper cutter deck; from cutters through the upper shaker Assist Peeler Sanitation as necessary Guide new and temporary employees in the clean-up process Ensure cleaning procedures are followed in the proper sequence Assist Process Team Leader in cleaning TEGRA Empty waste receptacles as needed Empty product waste containers and debris as needed Be aware of unusual odors Perform CIP of tanks and systems as necessary Clean lab equipment (refractometer, beakers, etc.) used in this process Rinse machines; apply cleaning/sanitizing chemicals, etc. Use proper cleaning/sanitizing chemical-handling procedures and equipment Adhere to GMP standards throughout the entire plant Ensure Food Safety by Following HACCP (Hazard Analysis & Critical Control Points) Maintain personal cleanliness, wash hands frequently, wear hairnet, wear sanitary gloves Do not store chemicals too close to food products Avoid spilling oil or cleaning fluids on food products Avoid cross-contamination Follow color code policy Follow proper procedures, practices, training Verify correct ingredients are being used Do not use contaminated raw materials Be familiar with all process flow diagrams Know all critical control points in all processes; i.e. metal detection Sort out foreign material; i.e. wood, stickers, plastic, etc. Communicate Effectively Exchange information with Team Leaders and Supervisor as necessary Exchange information with next crew members Communicate with Utility person and co-workers as necessary Report mechanical problems to appropriate person(s); i.e. Maintenance, Team Leaders, Supervisor Receive information and specification sheets from Lab Techs Operate Forklift and Pallet Jack Daily Perform daily maintenance checks on forklift (fluids, brakes, etc.) Remove waste products as necessary Bring in empty bins for waste materials as needed Watch for pedestrians and traffic While operating forklift, wear seat belt at all times Monitor Equipment Visually inspect equipment for GMP requirements Monitor equipment for impaired product flow Complete Paperwork Accurately Record weight of waste bins as required Put seals on tankers Complete inventory tickets on finished slurry Fill out Bill of Lading (BOL) with all proper information Operate Processing Equipment Monitor the hammer mill, finisher, pumps, belts, etc. Monitor raw slurry levels in tanks Monitor finished slurry in the truck Monitor heat exchanger for proper temperature Adjust pumps and belts as needed Maintain equipment when plug-ups or over-flows occur Check magnets and record results throughout the shift Rinse, return, and stack empty bins in lot Assist Process Team Leader in the Evap process Record flow meter readings as instructed Ensure Product Meets Customer Specifications Check brix levels and record on Bill of Lading (BOL) Check/monitor sulfite levels to ensure that they do not exceed customer specifications Notify Lab Tech regarding lab supplies and equipment issues Other Duties Relieve coworkers for lunch and breaks as necessary Process rework product as needed Lock-Out Tag-Out Make sure to have a complete and clear understanding of all Lock-Out Tag-Out procedures Use proper Lock-Out Tag-Out procedures at all times (washing/cleaning machinery, etc.) QUALIFICATION REQUIREMENTS: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.
