To cut the shoulder, disjointing the wing from the front half to present it in a proper manner for the wing rounder. This role involves making accurate cuts on every front half around the shoulder and along the scapula, properly pulling the breast downward to separate meat from the frame, and monitoring and continuously improving cut quality while maintaining low scrape scores. The Shoulder Cutter is also responsible for paying close attention to bones and removing them as necessary, sharpening knife blades every 3 or 4 birds, and changing out blades at each break. This position is responsible for preparing presentations for wing cutters and actively participates as a member of the team, fostering strong cohesiveness and working collaboratively to resolve issues and achieve synergy within the organization. The role requires familiarity with Simmons’ established operating systems and understanding the responsibility to maintain this familiarity and the position’s role in supporting these systems.
