As Senior Manager of Catering, you’ll partner with the Executive Director to lead the day-to-day operation of high-impact events while helping shape the strategy behind them. From driving revenue with our highest-profile clients to supporting Casino Marketing events, Company Activations, and Group Business, you’ll be at the center of it all. Requirements

  • Must be 21 years of age or older
  • Bachelor's Degree preferred
  • Two (2) years of prior relevant experience in Catering, Conventions and/or Banquet Services
  • Proven ability to service high-touch Social, Philanthropic clientele, with experience supporting Casino Marketing and Corporate Group Management
  • Expert working knowledge of food, wine and beverage service including menu development
  • Prior experience in a luxury resort or upscale hospitality setting strongly preferred
  • Exceptional customer service and interpersonal skills to communicate effectively with all stakeholders

Responsibilities

  • Directly manage high-revenue, high-profile convention clients, including food and beverage programs, menu planning, event setup, décor budgets, and billing details to ensure overall program success
  • Lead and oversee daily operations of the Catering team, including event execution, coaching staff performance, and providing ongoing feedback, recognition, and corrective guidance
  • Drive revenue and mitigate risk by reviewing space availability, negotiating and monitoring contracts, writing discount clauses, and implementing strategies to target off-peak dates while building strong client relationships
  • Assist the Director in achieving annual budget and monthly forecasting goals through reporting, competitor analysis, and the development and implementation of new products, services, technologies, and marketing strategies (including weddings and social events)
  • Maintain accountability for guest service and brand standards by modeling professional behavior and refining service expectations for both internal and external interactions
  • Support the Director in establishing, implementing, and enforcing Catering departmental policies and procedures
  • Oversee Human Resources responsibilities for the team, including hiring, staffing evaluations, training, performance management, succession planning, and fostering a collaborative, respectful, and high-performing work environment aligned with diversity commitments
