About The Position

Oversee the functions that ensure that all inventoried items are properly ordered, handled, stored, distributed, tracked and inventoried. Also, responsible for the preparation, cooking, transport, and serving of scheduled menu items according to supervisor’s instructions and food production sheets.

Requirements

  • High school diploma or equivalent experience and 1 year of previous food preparation experience required.
  • Knowledge of food storage requirements and inventory tracking.
  • Knowledge of quality volume food preparation and production using accurate measurement with standard recipes.
  • Extensive knowledge of a variety of cooking methods and techniques, proper safe food handling practices, and skills. Including quality volume food preparation; accurate measurement with standard recipes; produce and seafood handling; and meat cut identification and handling.
  • Must have a valid driver’s license and the ability to acquire and maintain a Middlebury College driver’s within three months of being hired.
  • Ability to complete Serve Safe Managers Level training within 90 days of hire.
  • Demonstrates excellent customer service skills to interact with drivers, farmers and sales representatives.
  • Possess basic understanding of computers and data entry for ordering, receiving, inventorying and transferring products in and out of the unit.

Responsibilities

  • Receive and check in deliveries of food and nonfood items. Ensure proper storage and spot check for packaging integrity, safe temperatures, and accurate weights. Complete invoice processing.
  • Conduct daily inventories, stock and store food and supplies in appropriate areas, and rotate stock to maintain product integrity. Thaw food in a timely manner for meal prep.
  • Maintain organized inventory areas using bin/shelf systems aligned with order/inventory sheets.
  • Ensure accurate stock levels of all items within the dining operations and procure items from other units as needed. Delivers and acts as the Truck Driver as necessary.
  • Follow and ensure proper sanitation procedures when thawing, storing, and handling food items.
  • Clean, sweep, and mop work areas including but not limited to coolers, storerooms, loading docks, prep and other work areas,
  • Prepare proteins, vegetables, fruits, and other ingredients for daily meal production, including salad bar items.
  • Collaborate with kitchen staff to ensure timely and quality food production, assisting other cooks and kitchen workers as needed.
