About The Position

This role involves producing food daily while maintaining quality standards and a strong work ethic. The cook will season and cook food according to recipes or personal judgment and experience, and weigh, measure, and mix ingredients. They will also regulate oven temperatures, observe and test foods for doneness, and ensure proper presentation for maximum appeal and freshness. Maintaining production knowledge, attention to detail with taste and quality, and producing products in a cost-effective and hygienic manner are key. The cook must adhere to departmental uniform standards, follow food storage principles, and strive to improve operating procedures. Proper labeling and dating of products are essential for rotation, safekeeping, and sanitation. Ensuring superior food quality and taking action to correct irregularities, as well as ensuring kitchen equipment is properly maintained, are also responsibilities. The role requires working within sanitation standards and in compliance with regulations, and collaborating with others to ensure kitchen cleanliness and organization. Creating and maintaining a positive and safe work environment, promoting positive team member relations, and reporting issues are also part of the job. Other duties may be assigned.

Requirements

  • Ability to obtain a Class III B gaming license.
  • 2 (two) years certificate from an accredited culinary program or minimum 2 years’ experience in a similar food service facility required.
  • Valid WA State Health Card/Food Handler permit required.
  • Knowledge of all applicable food sanitation regulations.
  • Knowledge of health & safety standards, and safety regulations as required.
  • Skilled in handling kitchen utensils including but not limited to knives.
  • Skilled in basic math skills; demonstrate ability to understand, calculate and follow recipe measurements and proportions.
  • Read, write, and speak English fluently.
  • Ability to multi-task in a fast-paced and high-pressure environment.
  • Ability to read and understand information and ideas presented in writing.
  • Ability to follow procedures and take directions.
  • Ability to always maintain professional appearance and demeanor.

Responsibilities

  • Regulate temperature of ovens, broilers, grills, and roasters.
  • Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
  • Ensure proper presentation to provide maximum appeal and freshness.
  • Maintain production knowledge and attention to detail with taste and quality.
  • Produce products in a cost effective and hygienic manner.
  • Adhere to departmental uniform standards.
  • Follow food storage principles and hierarchy per food code.
  • Constantly strive to improve operating procedures.
  • Properly label and date all products to ensure rotation, safekeeping, and sanitation.
  • Ensure food quality is superior and takes action to correct any irregularities.
  • Ensure kitchen equipment is properly maintained and functioning.
  • Work within the sanitation standards and in compliance of MIC, local, state, and federal regulations, and guidelines.
  • Work with others to ensure the cleanliness and organization of the kitchen.
  • Creates, maintains, and facilitates a positive and safe work environment; promotes positive team member relations and reports issues to the appropriate personnel.
