About The Position

Lead protein processing, warehouse operations, and distribution at our Baltimore facility. Supervise production team, optimize yields, manage inventory controls, and ensure quality from receiving through delivery.

Requirements

  • 3-5 years in protein processing/meat fabrication
  • 2+ years supervisory experience in production/distribution
  • Expertise in beef/pork processing and custom fabrication
  • Warehouse operations and cold storage experience
  • Understanding of yield calculation and waste management
  • Familiarity with catch-weight inventory systems
  • FIFO rotation, lot tracking, and inventory controls
  • Order fulfillment and logistics coordination
  • Basic Microsoft Office or Google Workspace (Excel, Word, Email)
  • USDA regulations knowledge
  • HACCP or food safety certification
  • Understanding of OSHA warehouse safety
  • Lift 50+ lbs regularly
  • Work in cold environments (34-40°F)
  • Early morning starts (4:00-5:00 AM typical)
  • Stand for extended periods

Responsibilities

  • Supervise cutting, fabrication, and packaging of beef, pork, and specialty proteins
  • Maximize yield percentages and minimize waste across all products
  • Monitor quality standards, trimming specs, and portion accuracy
  • Track by-products (bones, trim, fat) for revenue optimization
  • Manage production schedules for on-time fulfillment
  • Oversee receiving, inspection, and cold storage of raw materials
  • Coordinate order picking, staging, and loading dock operations
  • Enforce FIFO rotation and maintain organized warehouse zones
  • Conduct cycle counts and reconcile inventory
  • Verify order accuracy and coordinate driver departures
  • Learn and operate ERP systems for production and inventory tracking
  • Maintain records in Excel/Google Sheets for yields, waste, and output
  • Support barcode scanning for receiving, production, and shipping
  • Generate daily reports on metrics, inventory, and fulfillment
  • Document lot codes, temperature logs, and compliance records
  • Supervise 10-15 staff across production, warehouse, and distribution
  • Communicate in English and Spanish (bilingual preferred)
  • Conduct performance reviews and skills training
  • Assign tasks and cross-train for flexibility
  • Implement HACCP protocols and maintain USDA compliance
  • Monitor temperature controls and cold chain management
  • Ensure sanitation and safety standards
  • Resolve quality and delivery issues immediately
  • Other duties as assigned
