About The Position

Home Chef, a leading meal solutions company with both retail and online presence, is introducing a new brand, Tempo, which features a rotating selection of ready-to-heat meals. This role is for a Production Cook on the 2nd shift, working from 4:00 PM to 12:30 AM, with Saturdays and Sundays off. The Production Cook is responsible for various stages of food preparation for the Ready to Heat (RTH) business, including raw food prep, cooking, cooling, labeling, and portioning, while also managing documentation, counts, and tracking progress. Adherence to all floor safety and food safety standard operating procedures (SOPs) is mandatory.

Nice To Haves

  • HS Diploma preferred but not required
  • 6+ months of production/warehouse environment preferred

Responsibilities

  • Raw food prep, washing, cutting, cooking, cooling
  • Receive direction from Production Kitchen Supervisor to fulfill production requirements
  • Label packaging at the standard average rate, and submit progress made on activities throughout the day
  • Read and understand recipes
  • Cook food in ovens or tilt skillets
  • Prepare sauces and components for ingredients
  • Transition between tasks when needed
  • Move hot speed racks or food into blast chillers
  • Safely use all cooking, cooling, traying, and labeling equipment
  • Accurately document times, temperatures, and other key information for food safety batch tracing & CCP documentation
  • Use proper measuring utensils to portion ingredients
  • Maintain a clean and safe workspace
  • Clean & sanitize probes, tables, and other smallwares between recipe steps
  • Conduct full changeovers when introducing a new allergen to a workspace
  • Run Clean cycles on Rational ovens, blast chillers, and clean out tilt skillets
  • Follow all GMPs while onsite at the facilities, including additional GMPs identified in high care areas where ROP is being manufactured
  • Keep work area clean at all times and assist in EOD clean ups
  • Adhere to all safety guidelines (i.e. proper lifting techniques)
  • Adhere to Food Safety Cardinal Rules
  • Support the efforts of the company to maintain our food safety system (SQF) and quality programs
  • Be up to date on all alchemy training, including ROP and RTH specific courses
  • Basic understanding and troubleshooting of kitchen equipment
  • Document food transitions throughout process with careful attention to detail
  • Track and share progress of food at all stages
