About The Position

The Bakery at Gimme is the exclusive baked goods supplier for Gimme! Coffee, a specialty coffee roaster/retailer founded in 2000 in Ithaca, NY. All pastries are house-made daily, and delivered to each of our Ithaca locations. It's a fun and fast-paced environment with opportunities for learning and advancement. The production baker role is an independent, hands-on, early morning baker position which requires strong baking skills, speed and attention to detail. Under the supervision of the bakery director, the production baker is responsible for producing consistently excellent results while following standardized recipes and procedures. In addition, a 30-60 minute local delivery is required after the first morning bake as well as basic daily cleaning tasks. This position does require early morning, weekday, weekend and some holiday availability. Averages between 35-40hrs a week.

Requirements

Keen tasting and smelling abilities are a key component of the job
Valid driver’s license and excellent driving record

Interest in pursuing a career in baking and pastry or culinary arts
Ability to understand and carry out oral and/or written instructions and request clarification when needed
Ability to learn quickly
Ability to adapt and learn new procedures
Close attention to detail
Organized, efficient, and excellent at multitasking
Documentation of being at least 18 years of age and eligible to work in the United States
Previous experience in a production baking facility preferred, but not required
Baking and Pastry degree preferred, but not required
Experience in customer service or hospitality industry preferred
Experience modifying recipes and using gram scales
Experience with convection ovens and large capacity mixers
Familiarity with ServSafe training, GMPs and FSMA guidelines a plus.
Will train the right candidate

Exerting up to 100 pounds of force occasionally, and/or up to 50 pounds of force frequently, and/or up to 20 pounds of force constantly to move objects.
Visual acuity to determine the accuracy, neatness, and thoroughness of the work assigned, to operate machinery, and to make general observations of facilities or structures.
Frequently required to taste and smell coffee and/or food for evaluation purposes.
May be required to work more than 40 hours per week to perform the essential duties of the position.

Responsibilities

Accurately measures and mixes ingredients according to approved recipes.
Opens the bakery, and turns ovens on as early as 3am.
Efficiently carries out the early morning bake for our Gimme! Coffee locations and wholesale accounts.
Prioritizes daily prep list and efficiently performs daily baking tasks making products including, but not limited to scones, muffins, croissants, turnovers, morning buns, cookies, cakes, bars and other desserts, syrups for coffee and chai tea concentrate.
Adjusts recipes and retail par sheets to increase or decrease the amount of product made and/or sent out as appropriate.
Constantly monitors quality of baked goods; promptly communicates issues with teammates.
Cooperates with the team and suggests ideas to improve work-flow and minimize waste.
Stays late to get job done if necessary; calls for coverage if unable to work; covers shifts in emergencies.
Replenishes and organizes ingredient stock.
Assists with putting orders away properly.
Labels and rotates products accurately.
Washes dishes with a commercial dishwasher and occasionally by hand.
Deep cleans bakery equipment on a regular basis.
Assists in general clean-up and sanitation of the bakery as needed.
Maintains work area in a neat, clean, sanitary and orderly manner.
Observes all Gimme! Coffee approved sanitation and safety procedures at all times.
