About The Position

Cook and prepare a variety of food products including meats, seafood, poultry, vegetables, sauces, stocks, breads and other food products using a variety of equipment and utensils according to the daily prep list.

Requirements

  • Food handler permit
  • 6 months of exceeding expectations in current dishwasher or higher in-house position and/or 1 year of experience in kitchen preparation and cooking.
  • Ability to take initiative.
  • Current knowledge of occupational safety issues.
  • Excellent interpersonal skills.
  • Possess a positive attitude.
  • Ability to work in a team environment.
  • Must be able to follow instructions and follow food preparation sheets.
  • Pass NRWC pre-employment testing.
  • Ability to work peak business hours.
  • Ability to obtain a Class II Gaming License.

  • 1 year previous line cooking skills in high volume kitchen
  • Servsafe Certified
  • Able to work under time constraints to produce food according to established standards.

Responsibilities

  • Complete opening and closing checklists
  • Refer to daily prep list at start of each shift for assigned duties
  • Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment
  • Must possess proper knife skills to maintain a safe working environment
  • The use of knives, hand tools, utensils, and equipment to portion, cut, slice, mash, puree, whip, beat, roll, stuff, maintain holding temperature, cook, or otherwise produce food in the vegetable station.
  • Uses our standard recipes for preparation and portioning of all products; portion food products prior to cooking according to standard portion sizes and recipe specifications
  • Understands and complies consistently with our portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
  • Prepare items for cooking by peeling, paring, coring, portioning, washing, sectioning, zesting, cutting, or scoring.
  • Prepare garnishes for vegetable station items.
  • Maintains a clean and sanitary work station area including tables, shelves, walls, cooking equipment and refrigeration equipment.
  • Monitors and maintains proper cooking and holding temperatures
  • Ensures that closing checklists are complete at the end of day.
  • Assists others in closing the kitchen
  • Attends all scheduled team member meetings and brings suggestions for improvement
  • Perform other duties as assigned.
