The Porter position is responsible for maintaining the cleanliness and sanitation of the front of the house, including all tables, counters, floors, windows, and beverage stations. Key duties involve bussing, clearing, and cleaning tables, and sweeping floors during peak service times, as well as prepping prior to service. The role also includes following safety procedures for transporting dishes and utensils from the front of the house to the kitchen using trays, bus tubs, or carts. Porters wash dishes, glasses, and pots, clean cooking stations and equipment to ensure a smooth flow of service while upholding sanitation standards. This involves scraping and rinsing food from dishes and washing them either by hand or using a dishwashing machine. The position requires keeping display equipment clean, free of debris, and compliant with safety and sanitation standards during meal service. Porters also assist with receiving heavy deliveries from the dock, transporting them to storage areas while observing safe lifting standards, and performing other assigned duties. They ensure proper presentation, portion control, and maintenance of serving temperatures, adhering to HACCP standards. A personal commitment to safety and adherence to company policies, including the use of specific safety equipment like cut gloves, oven mitts, fryer gloves, steamer gloves, and slip-resistant shoes, along with proper lifting techniques, are essential.
