We’re hiring a Performance Chef to join our culinary team supporting the Toronto Blue Jays in Dunedin, FL.

Requirements

  • 2+ years experience working in foodservice
  • Culinary degree
  • ServSafe Food Protection Manager Certification
  • Highly motivated and excellent problem solver
  • Ability to cook authentic meals from Latin American cultures
  • Receptive to feedback
  • Exceptional communication skills, both verbally and in writing
  • The ability to work a non-standard work-week, including nights, weekends and holidays
  • Strong attention to details, especially with presentation of food and meal delivery times
  • Ability to work within multicultural populations and devise menus around the needs of their respective background
  • Able to work non-standard work week, including early mornings, evenings, weekends, holidays

Responsibilities

  • Managing all culinary aspects of the performance food catering operation for the Toronto Blue Jays in Dunedin, FL.
  • Daily kitchen operation management.
  • Hands-on supervision of kitchen staff.
  • Training and development of kitchen staff.
  • Enforcement of standards.
  • Assuming full responsibility for the operation in absence of the Executive Chef.
  • Delivering a high standard of service that meets and exceeds the expectations of the Toronto Blue Jays organization.
  • Working with Registered Dietitians to build meals that fit within nutritional guidelines of TBJ nutrition.
  • Preparing and delivering both pregame and postgame meals for all homestands.
  • Coordinating meals for the team on the road and messaging details to visiting clubhouse manager.
  • Maintaining purchasing, receiving and food storage standards at the affiliate site.
  • Understanding individualized player needs for food allergies, periodization, portions, and specialized diets.
  • Adapting to player needs and schedule changes with a relentless service-minded approach.
  • Communicating daily with dietitians, affiliate staff, players, and corresponding team members to ensure meals are meeting expectations.
  • Documenting menus, receipts, and vendors utilized at each visiting location.
  • Facilitating a system for gathering reliable feedback on menu design and quality.
  • Controlling food waste and identifying opportunities for food cost savings.
