The Pastry Cook works effectively as part of the pastry team, primarily responsible for, but not limited to, completion of all tasks related to preparation, baking and production of pastry items for events or outlets in accordance with property recipes, standards and adhering to all food safety and sanitation regulations. This role involves anticipating and understanding guests’ service needs, ascertaining satisfaction, and responding urgently and appropriately to guest concerns and requests. The team member must consistently conduct themselves in a professional manner at all times and work professionally with colleagues and team leaders with a team-minded approach. They will prepare and set up their station to ensure the execution of daily service, collecting and transporting all supplies needed for the shift and set up of station including, but not limited to food product, equipment and supplies. Menu items will be prepared according to property and brand standards and recipes established by pastry leadership team, with the ability to alter menu items to accommodate guests’ dietary needs or preferences as requested. The Pastry Cook will follow the pastry preparation production schedule, accurately weighing and measuring ingredients, combining and mixing by hand or electric mixer, batters, doughs, icings and dessert sauces. They will knead, cut and form various doughs, properly leaven, garnish, bake and cool breads and quickbreads, and properly assemble, bake, cool and garnish pies, cakes, cookies, pastries and confections. The role also includes properly mixing and freezing fresh ice creams and sorbets, monitoring and maintaining proper cooking temperature, product cooling and labeling. The team member will lift and move equipment to and from work station, stove, refrigerator, etc., and monitor and maintain cleanliness, sanitation and organization of work area, station, equipment and utensils before, during and after shift, ensuring par levels of ingredients and equipment are available and practicing “clean as you go.” Prep work will be maintained throughout the shift, and supplies, utensils and portable equipment will be distributed. Proficient knife skills and the use of a variety of pastry equipment are expected. Adherence to and maintenance of all food storage, handling, quality, and nutritional standards are required. The role involves performing technical pastry production, portion control and service standards. Attendance at pre-shift meetings before events to learn shift details, including property and guest expectations, and participation in all required meetings are necessary. End of shift cleaning and restocking tasks and breakdown of station will be performed, and all food and beverage items, and supplies will be returned to the proper area, ensuring the work area is clean and neat prior to finishing the shift and departing. Communication with colleagues when taking over and finishing each shift is important. High standards of presentation, pastry supply quality, safety and cleanliness must be maintained. Proper kitchen safety protocols in regards to food preparation (storage, transportation, preparation, etc) and equipment usage will be followed. The role may involve identifying opportunities to optimize performance and create value by challenging existing processes; encouraging innovation and driving necessary change. Being a clear thinker, analyzing and resolving problems, and exercising good judgment are expected, with resolutions being thoughtful and guest-minded. Immediate follow-up with a leader is expected. Establishing and maintaining open, positive, collaborative, and professional internal and external relationships, developing lasting relationships with guests and securing repeat business, and fostering and promoting a cooperative working environment, maximizing efficiency and delivering the ultimate guest experience are key aspects of the role. Following all company and safety and security policies and procedures, reporting any maintenance problems, safety hazards, accidents, or injuries, completing safety training and certifications, and properly storing flammable materials are required. Ensuring compliance with hotel policies, procedures, and standards with self and colleagues, ensuring uniform and personal appearance are clean and professional, and maintaining confidentiality of proprietary information are also essential.
