About The Position

Fiddler’s Creek Club and Spa, an upscale private club renowned for exceptional dining and member-focused hospitality, is seeking a highly skilled and creative Pastry Chef to lead and elevate our pastry operations. This role is responsible for the design, production, and execution of all desserts, baked goods, and specialty pastry items across à la carte dining, tasting menus, banquets, and special events. The ideal candidate is both an accomplished artisan and a collaborative leader—bringing technical mastery, refined presentation, and creative vision to a high-standards culinary environment.

Requirements

  • Formal culinary or pastry arts education preferred
  • Minimum 3–5 years professional pastry experience in a fine-dining restaurant, luxury hotel, resort, or private club environment.
  • Demonstrated mastery of advanced pastry and baking techniques, including plated desserts, chocolate and sugar work, ice creams, laminated doughs and artisan breads.
  • Proven leadership and communication skills with the ability to train, mentor, and inspire a team.
  • Exceptional attention to detail, creativity, and a commitment to culinary excellence.
  • Ability to manage and execute simultaneous events and à la carte service.
  • Working knowledge of food cost management, ordering systems, and inventory control.
  • ServSafe or equivalent food safety certification required.

Responsibilities

  • Develop, execute and maintain high-quality dessert menus for daily service, holiday events, banquets, and special functions.
  • Create visually refined, well-balanced pastries, breads, chocolates, and plated desserts that align with the club’s upscale standards.
  • Lead all pastry production, ensuring consistency, flavor excellence, and impeccable presentation.
  • Execute à la carte dinner service plating with precision and efficiency.
  • Lead, train, and mentor pastry team members, fostering technical growth, professionalism, and seasonal updates.
  • Collaborate closely with the Executive Chef and culinary leadership on menu development, tastings, and seasonal updates.
  • Oversee pastry inventory, ordering, and cost control to meet budgetary goals without compromising quality.
  • Maintain accurate recipe documentation, production schedules, and standardized processes.
  • Ensure all pastry areas adhere to the highest standards of cleanliness, food safety, and sanitation.
  • Prepare custom and specialty pastry items for member events, weddings, and high-profile occasions.
  • Stay current on pastry trends, techniques, and industry best practices, integrating innovation into the program where appropriate.
