About The Position

The Pastry Chef leads, participates in, and oversees all facets of Snoqualmie Casino & Hotel’s bakery productions, ensuring the creation of an exceptional array of desserts and baked goods that elevate the guest experience to a four-diamond standard. This role is integral to delivering a refined and memorable culinary experience, achieved through expert leadership, meticulous attention to detail, and a deep commitment to guest satisfaction.

Requirements

  • Five (5) years of experience in a bakery or pastry production environment within an equivalent-sized property.
  • Three (3) years of experience leading others in a supervisory or manager role.
  • Proficiency in a wide range of baking and pastry techniques, with the ability to produce high-quality desserts and baked goods.
  • Strong understanding of flavor profiles, ingredient functions, and recipe development.
  • Strong leadership skills with the ability to motivate, train, and manage a diverse team.
  • Proven ability to supervise multiple tasks and projects simultaneously while maintaining high standards of quality and consistency.
  • Excellent verbal and written communication skills, with the ability to convey expectations, provide constructive feedback, and foster open communication within the team.
  • Ability to collaborate effectively with other departments and external vendors.
  • Strong analytical skills with the ability to assess situations, identify problems, and implement effective solutions.
  • Ability to make quick decisions in a fast-paced environment while maintaining attention to detail.
  • Exceptional organizational abilities, including time management and prioritization of tasks.
  • Proficient in managing inventory, schedules, and documentation to ensure smooth operations.
  • Familiarity with bakery equipment and technology, including the ability to troubleshoot and arrange for repairs.
  • Competency in using computer software for inventory management, scheduling, and reporting.
  • A strong commitment to providing excellent customer service, with an understanding of how product quality and presentation impact guest satisfaction.
  • Ability to adapt to guest needs and preferences, ensuring a positive dining experience.
  • Must obtain and maintain a Gaming License from the Snoqualmie Gaming Commission.
  • Pre-employment drug testing is required for all positions.
  • The use of marijuana will not disqualify an applicant for positions in any department other than Transportation (Valet, Driver I).
  • DOT panel testing is required for the Driver position.

Nice To Haves

  • Culinary degree or ACF Certification preferred.
  • Experience in high-volume production working within a hospitality or casino setting preferred.

Responsibilities

  • Ensure all bakery items and desserts meet freshness and availability standards, enhancing the guest experience.
  • Actively participate in the preparation and presentation of bakery products.
  • Regularly gather and analyze guest feedback to drive continuous improvement in product offerings and services.
  • Lead, coach, and work alongside bakery team members to consistently produce high-quality desserts and baked goods.
  • Oversee menu and recipe development, incorporating guest feedback and industry trends to keep offerings innovative and appealing.
  • Manage inventory and cost controls to maximize efficiency and minimize waste.
  • Prepare productivity reports and maintain preparation and par level sheets, ensuring cost-effective operations.
  • Ensure all bakery equipment is fully operational and arrange timely repairs as needed.
  • Enforce health, safety, and sanitation standards while conducting regular safety training for the team.
  • Oversee, train, and work closely with the bakery team, fostering a culture of excellence and growth.
  • Supervise and participate in bakery production across all Food & Beverage outlets, ensuring consistent quality and adherence to standards.
  • Lead efforts to source sustainable ingredients and implement environmentally friendly practices within the bakery.
  • Promote a culture of sustainability through mindful resource management and product selection.
  • Enforce adherence to all department and casino policies and procedures, ensuring full compliance in all bakery operations.
  • Regularly review and update protocols to maintain the highest standards.
  • Perform other duties as assigned, including direct involvement in baking and production tasks, contributing to the overall success and guest satisfaction at Snoqualmie Casino & Hotel.
  • Adapt to changing priorities and needs within the department to ensure operational excellence.
