About The Position

Join the team at Fairmont Banff Springs, a renowned hotel in a spectacular alpine destination. This role is for an Overnight Baker who will be responsible for producing fresh, handcrafted baked goods from scratch, adhering to high standards of food safety, craftsmanship, and operational excellence. The position operates under a "Make It Count" philosophy, ensuring exceptional quality for daily service, breakfast, banquets, and restaurant operations.

Requirements

  • Third Cook: 6 months to 1 year of kitchen experience preferred, in either a pastry or bakery environment.
  • Third Cook: Strong interest in pursuing a Baker Apprenticeship (sponsored program).
  • Third Cook: Basic knowledge of food safety and kitchen operations, including culinary fundamentals and baking techniques.
  • Third Cook: Willingness to learn and take direction from senior kitchen staff.
  • Third Cook: Strong communication and time management skills.
  • Third Cook: Comfortable receiving coaching and feedback from senior staff.
  • Third Cook: Demonstrates eagerness to build speed, accuracy, and consistency through repetition.
  • Third Cook: Shows curiosity and a desire to grow into line responsibilities over time.
  • First Cook: Minimum 2 years of bakery production experience in a high-volume bakery, hotel, resort, or commercial kitchen.
  • First Cook: Experience producing artisan breads, sourdough products, naturally fermented breads, and laminated doughs.
  • First Cook: Valid Canadian Food Handler Certification.
  • First Cook: Strong knowledge of baking techniques, fermentation, and bread production.
  • First Cook: Excellent attention to detail and commitment to producing consistent, high-quality products.
  • First Cook: Ability to work independently and efficiently during overnight shifts.
  • First Cook: Strong organizational, communication, and time management skills.
  • First Cook: Positive attitude with a collaborative approach to working within a team.
  • Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.

Nice To Haves

  • Culinary diploma or equivalent training is considered an asset.

Responsibilities

  • Prepare and bake a variety of artisan breads, rolls, sourdoughs, laminated doughs, and specialty baked goods, completing all stages of production—from mixing and scaling to proofing, baking, and finishing—while ensuring at least 75% of products are made from scratch.
  • Execute overnight bakery production according to standardized recipes, production schedules, and quality standards to support breakfast, banquet, and restaurant operations, while monitoring dough development, fermentation, proofing, and baking for consistent results.
  • Maintain exceptional food safety and sanitation standards by following proper food handling, storage, labeling, date coding, FIFO rotation, temperature monitoring, and cleanliness procedures in compliance with hotel and regulatory requirements.
  • Safely operate and maintain commercial bakery equipment including mixers, sheeters, ovens, proofers, blast freezers, fryers, and steamers, while keeping workstations organized, fully stocked, and prepared for a seamless handover to the day shift.
  • Support continuous improvement and teamwork by assisting culinary leadership with daily production planning, contributing ideas to enhance recipes and processes, and consistently upholding the hotel's culinary, grooming, and operational standards.
