About The Position

Under the direction of the Pastry Chef, the Overnight Baker is responsible for preparing, baking, and finishing of all breads, breakfast pastries, cookies and other specified baked goods in accordance with departmental quality standards and specifications. The baker will maintain an organized and neat work environment while ensuring sanitation and safety standards are routinely met. This role involves anticipating guest needs, maintaining positive guest relations, and assisting with guest inquiries and complaints. The baker must have complete knowledge of and comply with all departmental policies, service procedures, and hotel standards, and properly maintain all kitchen equipment used. Key duties include completing opening and closing tasks, such as setting up workstations, checking production schedules, stocking supplies, assisting with prep work, minimizing waste, rotating and storing food items, cleaning work areas, and restocking depleted items. The baker will also meet with the Pastry Chef to review assignments and anticipated business levels, and prepare various baked goods for restaurants, room service, and banquets following recipes and yield guides.

Requirements

  • High school diploma or equivalent vocational training certificate.
  • Minimum three (3) years of experience working as a Baker or a similar position at a 4-star Hotel or Restaurant.
  • Possesses strong organizational and multi-tasking skills.
  • Able to maintain positive guest relations at all times.
  • Able to comprehend and follow recipes.
  • Show ability to expand/condense recipes as needed.
  • Able to arrive to work on time and be ready to work at the assigned station at the scheduled starting time.
  • Possesses strong verbal and written communication skills.
  • Ability to exert physical effort to transport up to 50 pounds.
  • Ability to endure various physical movements throughout the work areas.
  • Ability to reach 5 feet.
  • Maintain a stationary position for extended periods of time throughout work shift.

Nice To Haves

  • College degree in related field preferred.
  • Food handling/Food Sanitation certificate desired.
  • Certification of Culinary training or apprenticeship program preferred.

Responsibilities

  • Prepare, bake, and finish all breads, breakfast pastries, cookies, and other specified baked goods.
  • Maintain an organized and neat work environment.
  • Ensure sanitation and safety standards are routinely met.
  • Anticipate guest needs and respond promptly.
  • Maintain positive guest relations.
  • Respond to guest inquiries accurately.
  • Assist with resolving guest complaints.
  • Maintain complete knowledge of and comply with all departmental policies, service procedures, and hotel standards.
  • Properly maintain all kitchen equipment used.
  • Complete opening duties: Set up work station with required Mis en place, tools, equipment and supplies.
  • Inspect the cleanliness and working condition of all tools, equipment and supplies.
  • Check production schedule and pars.
  • Establish priority items for the day.
  • Notify Pastry Chef of any supplies that need to be requisitioned.
  • Transport supplies from the Storeroom and stock in designated areas.
  • Assist in prep work of items needed for the day.
  • Minimize waste and maintain controls to attain forecasted food cost.
  • Complete closing duties: Return all food items to proper storage, rotate product, wrap, cover, label and date items, straighten and organize storage areas, clean and wipe down food prep areas and storage, return unused/clean utensils/equipment, turn off equipment, restock depleted items.
  • Meet with Pastry Chef/Assistant Pastry Chef to review assignments, anticipated business levels, and other pertinent information.
  • Prepare and produce breads and other designated items for Restaurants, Room Service and Banquets.
  • Prepare and produce breakfast pastries for morning service.
  • Prepare and maintain back-up of pastry and bread batters for production.
  • Inform the Pastry Chef of any excess items that can be utilized.
  • Check bulletin board for daily and future functions.
  • Perform all other duties as may be required or assigned.
