About The Position

The Nutrition Services Director leads the coordination and direction of the Nutrition Services Department at Encompass Health. The role sets and implements policies and procedures for cafeteria management, food preparation, budgeting, purchasing, staff development, and safety practices. The director oversees food purchasing and inventory, sanitation and food handling, meal and cafeteria production, staffing, and menu development, while helping patients heal through nutrition services.

Requirements

• Required credential: Registered Dietitian (RD/RDN) with the Commission on Dietetic Registration (CDR), Dietetic Technician, Registered (DTR/NDTR) with the CDR, Certified Dietary Manager (CDM) with the Certifying Board for Dietary Managers (CBDM), or an executive chef.
• Three to five years of healthcare clinical nutrition or executive chef experience required.
• Ten or more years of healthcare food service experience, or five or more years of healthcare management experience required.
• Thorough knowledge of nutrition and dietetics, administration, and hospital food service operations.
• Knowledge of H.A.C.C.P. guidelines.

Nice To Haves

• Graduate of a bachelor's degree program in Dietetics, Culinary Arts, or a related field preferred.

Responsibilities

• Manage the departmental budget as it relates to the position.
• Perform and document purchasing, receiving, and inventory control of food and supplies.
• Maintain proper sanitation, temperature, and food handling techniques to comply with regulations.
• Determine the quality, quantity, and portion size of food required and ensure proper food handling.
• Ensure adequate staffing and manage department employees.
• Ensure production for patient meals and the cafeteria line is properly coordinated.
• Develop cafeteria menus as needed.
• Purchase food and assist with or assign duties for special needs and special occasions.
