A Mozzarella Maker is responsible for making fresh Mozzarella according to Eataly’s authentic Italian recipe. Reports to the Fresh Market Manager. Utilizes fresh mozzarella curd to heat, stretch by hand, and make housemade mozzarella and other pasta filata offerings fresh daily, according to Eataly recipes. Engages all senses: tastes, smells, feels, listens and observes all characteristics of each batch to maintain and elevate quality. Records daily the weight of ingredients used, batch sizes, and amounts transferred to other outlets. Makes variations in time cycles and ingredients used as necessary for succeeding batches. Cares for and handles products with careful attention to quality control and waste management. Weighs, packages and labels mozzarella lab offerings. Stocks display refrigerators neatly, accurately and in a timely manner. Provides guest service and information on mozzarella-making process to guests. Cleans work station thoroughly following food safety best practices. Ensures collateral supplies are in stock and being utilized properly in the lab. Performs other duties as required or assigned.
