The Meat Cutter is responsible for maintaining the desired level of fresh meat production, ensuring the cleanliness of the department and equipment, and upholding customer service and product quality, freshness, safety, and selection standards. This role involves adhering to company and division customer service programs, handling customer relations positively, and promoting a philosophy of personalized service. The position requires receiving and breaking down loads, checking for quality and quantity, and maintaining product quality through proper storage and temperature compliance. The Meat Cutter will cut, grind, weigh, and wrap fresh meat products according to procedure, control shrink and expenses, and prevent the sale of outdated or spoiled product. Accurate completion of daily logs and other required paperwork is essential. The role also includes maintaining and organizing the meat department cooler and freezer, ensuring cleanliness and sanitation of the sales floor, work area, equipment, and retail cases. Product quality, trimming, grinding, packaging, labeling, rotation, and wrapping standards must be met. Merchandising of product, compliance with labeling laws, and handling re-worked/reduced-to-clear items according to company policy are also key responsibilities. The Meat Cutter must comply with all health, food handling, and safety standards. Assisting customers with special orders, making product suggestions, and engaging in suggestive selling are part of the customer service aspect. Answering incoming calls appropriately and performing all job duties safely, accurately, and with integrity are expected. A working knowledge of all Meat Department duties, including cutting, wrapping, steaming, grinding, cubing, tenderizing, and customer service, is required. The ability to communicate orally and read/follow written assignments, along with a good understanding of company practices and Meat Department policies, is necessary. Knowledge of product variety, standards, perishability, food safety, sanitation, labeling, and department policies is crucial. The role involves frequent reaching, lifting, stacking, and maneuvering objects up to approximately 80 lbs, bending, stooping, reaching, and occasional climbing. Pushing and pulling loaded hand trucks, high boys, and pallet jacks, and performing repetitive arm movements are also part of the job. Manual dexterity, good eye-hand coordination, and mental alertness are necessary for safe and accurate work. Basic mathematics, weights and measures, knowledge of product taste, content, perishability, safety, sanitation, and department policies are required. The position requires operating computer software and electronic ordering devices, as well as utilizing saws, cutters, grinders, wrapping equipment, safety cutters, cleaning supplies, and safety gloves. The role may require working nights, weekends, and holidays, with varying scheduled hours and a requirement for good attendance. Exposure to potential hazards from cutting equipment and other work aids exists. Hands remain moist during most of the work time and are frequently exposed to 30° Fahrenheit while handling product in display cases. The ability to work for prolonged periods in an environment with temperatures ranging from 40° to 50° Fahrenheit is necessary. Exposure to 35° Fahrenheit in cold cases, 28° Fahrenheit in the cooler, and -20° Fahrenheit in the freezer is expected. The working conditions consist of a temperature-controlled store environment.
