The Meat Cutter position is responsible for maintaining the desired level of fresh meat production, ensuring the cleanliness of the department and equipment, and upholding customer service and product quality, freshness, safety, and selection. This role involves adhering to company and division customer service programs, handling customer relations positively, and promoting a philosophy of personalized service. The Meat Cutter receives and breaks down loads, checks for quality and quantity, and maintains product quality by ensuring compliance with storage and temperature regulations. They cut, grind, weigh, and wrap fresh meat products according to proper procedure, control shrink and expenses, and prevent the sale of outdated or spoiled product. Accurate completion of daily logs and other required paperwork is essential. The role also includes maintaining and organizing the meat department cooler and freezer, ensuring cleanliness and sanitation of the sales floor, work area, cooler, freezer, equipment, and retail cases. Product quality, trimming, grinding, packaging, labeling, rotation, and wrapping standards must be met. Merchandising of product, including understanding schematics, merchandising advertised items, proper signing procedures, and monitoring product flow, is also a key responsibility. Compliance with retail labeling laws, federal and state regulations, and company policies is required. The Meat Cutter follows company policies in pricing and handling re-worked and reduced-to-clear items and complies with all federal, state, and local health, food handling, and safety standards. They assist customers with special orders, make product suggestions, and engage in suggestive selling. Answering and responding to incoming calls appropriately is also part of the role. Performing all job duties and responsibilities safely, accurately, and with honesty and integrity is paramount. The position requires working knowledge of all job duties within the Meat Department, including cutting, wrapping, steaming, grinding, cubing, tenderizing, and customer service. Ability to communicate orally and read and follow written work assignments is necessary. A good understanding of overall company practices and Meat Department policies and procedures, along with the ability to judge and react to business activity, is required. Knowledge of product variety, standards, perishability, food safety, sanitation, labeling, and department policies and procedures is essential. The role involves operating computer software and electronic ordering devices, utilizing saws, cutters, grinders, and other cutting and wrapping equipment, as well as cleaning supplies and safety cutters. Use of safety gloves is required. The position may require working nights, weekends, and holidays, with scheduled hours varying. Good attendance is required. Exposure to potential hazards exists with respect to cutting equipment and other work aids. Hands remain moist during the majority of work time and are frequently exposed to cold temperatures while handling product. The ability to work for prolonged periods in an environment with a specific temperature range is necessary. Working conditions consist of a temperature-controlled store environment.
