About The Position

The Meat Cutter at Hugo's Family Marketplace is responsible for expertly cutting, trimming, grinding, and preparing various types of meat to meet customer specifications. This role ensures that all meat products are packaged, weighed, labeled, and priced accurately while maintaining proper rotation and storage to guarantee freshness and quality. The Meat Cutter plays a crucial role in keeping the meat department fully stocked and visually appealing, adhering to safety, sanitation, and temperature guidelines. This position requires the operation of meat-cutting equipment with a focus on quality, cleanliness, and organization, as well as assisting customers with product selection.

Requirements

High school diploma or GED
Minimum: 1–2 years of experience in a meat department or food service role
Proficient meat cutting and knife skills
Knowledge of various meat cuts and preparation methods
Adherence to food safety and sanitation compliance
Strong attention to detail and precision
Excellent customer service and communication skills
Ability to operate meat department equipment safely
Physical stamina and comfort working in cold environments
Effective time management and teamwork skills

Nice To Haves

Technical training or coursework in meat cutting, butchery, or food service
Food safety certification (as required by local regulations)
2–4+ years of hands-on meat cutting experience
Experience with retail meat department operations
Familiarity with inventory control and product rotation

Monitor inventory levels and assist with inventory control and product rotation.
