About The Position

The Meat Cutter is responsible for the preparation and display of various meat products. This includes cutting, trimming, and boning carcass sections or prime cuts into cooking cuts like roasts, steaks, chops, and stew cubes, as well as processing by-products such as lamb necks, riblets, and veal products, ensuring freshness. The role involves preparing individual servings of steaks and chops, shaping and tying roasts, and filling the showcase with cut meats and convenience items like kabobs, stir-fries, stuffed, and marinated products. Key duties also include receiving, inspecting, and storing meat deliveries, monitoring stock levels, and informing the Meat Manager of shortages. The Meat Cutter provides detailed information to customers regarding different cuts of lamb, pork, beef, poultry, sausage, convenience, and self-serve items, along with preparation advice. Additionally, the position may involve supervising 3-5 employees in the Meat Department, carrying out responsibilities such as training, planning, assigning work, and resolving complaints in accordance with company policies. Requirements

  • High School diploma or general education degree (GED)
  • Six months to one-year related experience and /or training
  • Equivalent combination of education and experience.

Responsibilities

  • Cuts, trims, and bones carcass sections or prime cuts to reduce to cooking cuts such as roasts, steaks, chops, stew cubes, and grinding meat.
  • Works out by products -- lamb necks, riblets, veal products -- assures nothing gets old.
  • Breaks veal and lamb.
  • Cuts and weighs steaks and chops for individual servings.
  • Shapes and ties roasts.
  • Fills showcase once the meat has been cut.
  • Receives, inspects, and stores meat upon delivery.
  • Inform the Meat Manager on the status of stock -- especially the shortage of items.
  • Provides information to customers about all the cuts of lamb, pork, beef, poultry, and types of sausage, convenience items, and self-serve items.
  • Prepares convenience items for the showcase including but not limited to kabobs, stir-fry, stuffed items, and marinated items.
  • Provides customers with information regarding the preparation of products in the showcase.

  • Directly supervise 3-5 employees in the Meat Department.
  • Carries out supervisory responsibilities by Company policies and applicable laws.
  • Responsibilities include training; planning, assigning, and directing work; addressing complaints, and resolving problems.
