This includes cutting, trimming, and boning carcass sections or prime cuts into cooking cuts like roasts, steaks, chops, and stew cubes, as well as processing by-products such as lamb necks, riblets, and veal products, ensuring freshness. The role involves preparing individual servings of steaks and chops, shaping and tying roasts, and filling the showcase with cut meats and convenience items like kabobs, stir-fries, stuffed, and marinated products. Key duties also include receiving, inspecting, and storing meat deliveries, monitoring stock levels, and informing the Meat Manager of shortages. The Meat Cutter provides detailed information to customers regarding different cuts of lamb, pork, beef, poultry, sausage, convenience, and self-serve items, along with preparation advice. Additionally, the position may involve supervising 3-5 employees in the Meat Department, carrying out responsibilities such as training, planning, assigning work, and resolving complaints in accordance with company policies.
