About The Position

A Meat Cutter Journeyman is a skilled professional responsible for preparing, cutting, and packaging meat products for retail or wholesale purposes while adhering to safety, quality, and customer service standards. This role requires in-depth knowledge of meat products, advanced cutting techniques, and compliance with food safety regulations.

Requirements

  • Proven experience as a Meat Cutter, with a minimum of 2-3 years in a professional setting.
  • Comprehensive understanding of meat cuts, yield management, and food safety regulations.
  • Advanced knife skills and experience operating meat saws, grinders, and other cutting equipment.
  • Ability to lift up to 50 pounds, stand for extended periods, and work in cold environments.
  • Strong focus on accuracy, cleanliness, and presentation.
  • Exceptional communication and interpersonal skills.

Nice To Haves

  • Certification in Meat Cutting or related training program.
  • Previous experience in a high-volume retail or wholesale meat environment.
  • Familiarity with specialty cuts or value-added products, such as smoked or marinated meats.

Responsibilities

  • Expertly cut, trim, and prepare various types of meat, including beef, pork, poultry, and lamb, to customer specifications or store requirements.
  • Portion, debone, grind, and package meats with precision and consistency.
  • Ensure all cuts are presented attractively and meet quality standards.
  • Monitor and manage inventory levels to ensure adequate supply and minimize waste.
  • Rotate stock to maintain freshness, using the FIFO (First In, First Out) method.
  • Assist in receiving and inspecting deliveries of meat products for quality and accuracy.
  • Maintain a clean and organized workspace in compliance with health and safety regulations.
  • Follow all food safety protocols, including proper storage and handling of raw and processed meats.
  • Operate and maintain cutting equipment, knives, and tools safely and efficiently.
  • Provide knowledgeable recommendations to customers on meat selections, cooking techniques, and portion sizes.
  • Take custom orders and ensure customer satisfaction with precision and professionalism.
  • Address customer questions and concerns in a friendly and helpful manner.
  • Work closely with other team members to achieve department goals and maintain smooth operations.
  • Assist with training and mentoring apprentices or junior staff.
