The Marine Room Cook 2 prepares entrees and hot appetizers for patrons, ensuring food is prepared in quantities according to the menu and number of persons to be served in a timely manner. This role involves maintaining a sanitary work area, plating food according to approved recipes, and properly storing food items. The cook will also prepare and present menu items following designated presentations, season food properly, and communicate with the expeditor for smooth service. Advanced knife skills are required, and the cook is responsible for the complete setup of mise en place before service, adhering to rotation and sanitation standards, and assuring the freshness, quality, and cooking temperature of finished products. The proper performance of this position will enhance the overall dining experience and ensure compliance with sanitation regulations, resulting in guest satisfaction and repeat customers.

Requirements

• One-year certificate from college or technical school; or three to six months related experience and/or training; or equivalent combination of education and experience.
• Ability to read and interpret documents such as safety rules, recipes, operating and maintenance instructions, and procedure manuals.
• Ability to write routine reports and correspondence.
• Ability to speak effectively in English to customers, management, and employees of organization.
• Ability to add, subtract, multiply and divide.
• Ability to calculate figures and amounts such as discounts, proportions, percentages and volume.
• Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.
• Ability to deal with problems involving several concrete variables in standardized situations.
• Must obtain and maintain a current San Diego County Food Handlers Card.
• Advanced knife skills to produce brunois, macedoine cuts, etc.

Responsibilities

• Prepares food in quantities according to menu and number of persons to be served in a timely manner.
• Prepares a large variety of finished products (i.e.: salsas, chutneys, infused oils.)
• Maintains work area and cooking equipment in proper and sanitary order.
• Prepares and plates food to order in accordance with approved recipes.
• Covers, dates, labels, and stores food items and ingredients during the scheduled shift.
• Supplies plated starches, vegetables and miscellaneous accompaniments to hotline and receives plates from hotline for finishing with sauces and garnishes.
• Prepares and presents menu items following recipes and designated presentation to include starches, multiple garnishes and soups.
• Properly seasons all food items.
• Communicates with expeditor to ensure smooth transition of finished plates to front of house.
• Always tastes prepared items prior to serving.
• Uses advanced knife skills to produce brunois, macedoine cuts, etc.
• Responsible for complete setup of mise en place for all menu and related special items ten minutes prior to service.
• Adheres to proper rotation and sanitation standards at all times.
• Assures overall freshness, quality, and cooking temperature of finished products.
• Properly closes and turns over work area at the end of shift assuring proper storage and minimal waste.
• Attends regularly scheduled kitchen meetings.
• Must obtain and maintain a current San Diego County Food Handlers Card.
• Consistently provide professional, attentive, and genuinely friendly service.
• Promote and follow LJBTC, Inc's Signature Service standards and requirements to ensure a lasting impression of exemplary service resulting in satisfied and loyal members and guests.
