About The Position

The incumbent in this position is responsible for maintaining a sanitary environment for food and beverage preparation and storage as well as providing clean service ware and utensils for the entire food and beverage operation. Responsible for supervising the day-to-day operations of the stewarding department including total maintenance and sanitation in all food production service areas (but not limited to). Ensure all food and beverage outlets have sufficient equipment to perform adequately.

Requirements

  • Completion of a high school diploma or equivalent, and a minimum of 1 -3 years experience as a Stewarding Supervisor; or an equivalent combination of education and experience.
  • Must obtain and maintain all licenses/certifications per Federal, State, and Indiana Gaming Commission.
  • Must successfully pass a background check.
  • Must successfully pass drug screening.
  • Must be at least twenty-one (21) years of age.
  • Knowledge of pertinent federal, state, and local laws, codes, and regulations.
  • Knowledge of all operations of the Stewards’ Department.
  • Demonstrated organizational skills, budgeting experience, and full understanding of financials.
  • Ability to communicate clearly and concisely, both orally and in writing.
  • Ability to deliver programs that create a service level of excellence for internal and external guests.
  • Ability to tie training to the organization’s strategic goals.
  • Ability to communicate effectively with all levels of employees and outside contacts.
  • Ability to review and comprehend all necessary documentation.
  • Ability to inspect and maintain all areas for which responsible.
  • Ability to stock and retrieve supplies as needed.

Nice To Haves

  • Prior experience in the Gaming industry is strongly preferred.

Responsibilities

  • Creates an atmosphere that induces guests to make Hard Rock Casino Northern Indiana their choice for gaming entertainment; responsible for actively building and retaining guest relations and acts as a mentor to team members in order to provide superior guest service.
  • Hires, trains, motivates, evaluates, and manages food and beverage staff in order to ensure that team members receive adequate guidance and resources to accomplish established department objectives.
  • Develops, implements, and monitors department standards, guidelines, and objectives, and maintains other administrative processes such as budget and staffing to ensure proper planning and efficient operation of the department.
  • Directs the maintenance of cleanliness of the back of the house areas, which include the main kitchen, storage areas, dumpster, loading dock, EDR, and washing areas.
  • Manage general cleaning schedule so that the foodservice areas meet or exceed the health inspection requirements.
  • Assists in the maintenance of the inventory and coordination of the distribution of all big four items: china, glassware, linens, and silver which also includes visual inspection to ensure cleanliness and safe transportation.
  • Assists Executive Stewart and Culinary Management team in overseeing and ensuring all Health Code Standards relating to cleanliness and sanitation requirements are maintained at all times in kitchens and back of house areas.
  • Controls equipment storage areas and the issuance of equipment for the Food Service Department.
  • Attend and participate in meetings, completing follow-up as assigned.
  • Perform work regularly and predictably.
  • Responsible for cleaning and sanitizing work and public spaces.
  • Other duties as assigned.
