About The Position

We're seeking a Performance Cook to join our team. The Performance Cook's duties will include maintaining equipment, performing other duties as directed by the Executive Chef, working catering events, nights, and weekends as needed, and ensuring the kitchen and surrounding areas are sanitized and clean in accordance with company standards and health code regulations. The role involves prepping creative, simple, health-oriented menu items daily, implementing EXOS’ nutrition principles, and following recipes, portion controls, and procedures. The cook will clean and maintain their station with exceptional safety, sanitation, and organizational skills, and answer, report, and follow instructions from the Executive or Sous Chef. Responsibilities also include assisting with cleaning, sanitation, and organization of kitchen, walk-in coolers, and storage areas, and performing additional responsibilities as requested.

Requirements

  • Minimum 2 year’s restaurant experience as a prep and/or line cook
  • Kitchen sensed, self-motivated, driven, organized, and clean
  • Ability to receive feedback and take instructions
  • Understanding of professional cooking, knife handling skills, and various cuisines
  • Understanding and knowledge of safety, sanitation and food handling procedures
  • Excellent customer service and a hospitable attitude
  • Professional communication skills
  • Understanding of Exchange System
  • Familiarity and experience with ESHA Food Processor
  • Ability to work in a team environment
  • Ability to work calmly and effectively under pressure in an open kitchen environment
  • Must be able to read, understand, and follow basic cooking directions
  • Must be able to work some catering events, nights, and weekends during high season
  • Commitment to quality service

Nice To Haves

  • Culinary Nutrition degree and background preferred

Responsibilities

  • Maintain equipment, including refrigerators, stoves, ice machines, dish washer, etc.
  • Perform other duties as directed by the Executive Chef
  • Must be able to work catering events, nights, and weekends as needed by client request.
  • Ensure that the kitchen and surrounding areas are sanitized and clean in accordance with company standards and health code regulations
  • Ability to prep creative, simple, health oriented menu items on a daily basis, implementing EXOS’ nutrition principles, in a sanitary and timely manner
  • Follows recipes, portion controls, and procedures as established by the EXOS kitchen
  • Cleans and maintains station up to standards while practicing exceptional safety, sanitation and organizational skills
  • Answers, reports, and follows Executive or Sous Chef’s instructions
  • Assists with the cleaning, sanitation, and organization of the kitchen, walk-in coolers, and storage areas
  • Performs additional responsibilities as requested by the chef or sous chef at any time
  • Other duties as assigned
