About The Position

Mamahuhu’s kitchen is built around our custom-made wok range. At 120,000 BTUs each, our wok burners are capable of transforming ingredients in seconds and creating complex, unique flavors. The speed of wok cooking requires everything to be ready before service begins — vegetables cut carefully, marinated meats sliced thinly, sauces prepared, and everything in its place. Our entire BOH team must work together closely to prepare for each service, ensuring everything comes together in a fast-paced environment. As a Line Cook, you are responsible for cooking and preparing menu items while following food safety protocols. We have 2 woks, a fry station, and a cold station. You must properly execute all menu items in a timely fashion, ensuring that each dish meets our high quality standards. Monitoring prepped ingredient levels and maintaining sufficient quantities at all times is an integral part of your role. We are seeking proactive individuals who love working in a fast-paced, demanding environment and want an arena in which to grow as our company continues to expand.

Requirements

  • Strong communication skills
  • Able to perform tasks with accuracy, speed, and attention to detail
  • Able to use Kitchen Display Screens (KDS) for managing orders
  • Works well in fast-paced environments and under pressure
  • Team player who can work productively with others
  • Must be organized and self-motivated
  • Must have an up-to-date Food Handler’s Card
  • At least 1–2 years of cooking experience
  • Strong work ethic and thrives as part of a close-knit team
  • Enjoys working with others
  • Has a sense of urgency, and challenges themselves to accomplish more each day
  • Has an extreme attention to detail
  • Is self-aware, receptive to constructive criticism, and actively works to improve
  • Can multitask and prioritize appropriately

Responsibilities

  • Cooking and preparing menu items while following food safety protocols.
  • Properly executing all menu items in a timely fashion, ensuring that each dish meets high quality standards.
  • Monitoring prepped ingredient levels and maintaining sufficient quantities at all times.
  • Prepare ingredients and assemble dishes as indicated by recipe.
  • Maintain cleanliness on station at all times.
  • Ensure that each dish is prepared in a timely manner while following quality standards.
  • Maintain up-to-date knowledge of recipes for the regular menu as well as catering.
  • Set up and break down stations according to restaurant protocol and checklists.
  • Comply with SF Health Department practices (e.g. changing sanitizer buckets, food safety protocols).
  • Assist team members with side work and washing dishes during slow periods.
  • Label, restock, and maintain the line using FIFO (First-In, First-Out) method.
  • Fulfill tasks presented by restaurant and kitchen management.
