About The Position

The Lead Pastry Chef and Cake Decorator is responsible for maintaining quality standards and product levels of all pastry and cake products in the Bakery. This role involves preparing, cooking, mixing, baking, assembling, packaging, labeling, and decorating cakes and pastries. Additionally, the position entails ordering, receiving, and storing products, determining production and inventory levels, and providing exceptional customer service. This individual will also train other Pastry Chefs and Cake Decorators, write production sheets, and provide feedback on performance.

Requirements

  • Current Food Handler’s Permit
  • Experience decorating cakes quickly and efficiently with quality professional results
  • Experience preparing pastries quickly and efficiently with quality professional results
  • Ability to read and follow a recipe
  • Basic math skills used to half or double recipes
  • Knowledge of mixing, cooking, baking, and assembling procedures and times for pastries
  • Ability to interpret policies and procedures
  • Excellent organization and planning skills
  • Solid communication skills, including verbal and listening skills
  • Ability to professionally and appropriately handle conflict
  • Ability to accept constructive review and be accountable for one’s own success as well as the success of your team
  • Must possess the ability to make logical, significant decisions using general, recognized skills and techniques
  • Must possess integrity, a positive attitude, be mission-driven, and be self-directed with a demonstrated passion for Harmons’ mission and commitment to working collaboratively

Responsibilities

  • Maintain quality standards and product levels of all pastry and cake products.
  • Prepare, cook, mix, bake, assemble, package, label, and decorate cakes and pastries.
  • Order, receive, and store products.
  • Determine production and inventory levels.
  • Provide exceptional customer service.
  • Train other Pastry Chefs and Cake Decorators.
  • Write production sheets for other Pastry Chefs and Cake Decorators.
  • Assist with test and quarterly inventory.
  • Teach, mentor, and educate associates.
  • Provide honest, direct, and constant feedback to Pastry Chefs and Cake Decorators.
  • Write the schedule for Pastry Chefs and Cake Decorators.
  • Communicate openly and frequently with Store Director, Bakery Manager, Cake and Pastry Merchandiser, and Director of Fresh Bakery.
  • Follow established departmental and store policies and procedures.
  • Ensure the quality and freshness of all products and services the Bakery provides.
  • Maintain the appropriate product assortment and inventory levels of all pastry and cake products.
  • Confirm pricing accuracy and signage for all products.
  • Ensure the Bakery is cleaned and sanitized daily and meets company standards for appearance.
  • Deliver excellent customer service to all customers.
  • Follow production sheets to ensure appropriate inventory levels of Harmons’ pastries and cakes.
  • Ensure the correct amount of ingredients and supplies are in stock.
  • Minimize waste by ordering and storing ingredients correctly, being mindful of out-of-code dates, and rotating product.
  • Bake and decorate cakes for sale and for custom orders.
  • Make frosting to be used for cake decorating.
