About The Position

At Muckleshoot Indian Bingo, the Lead Line Cook will lead a small team of line cooks and be responsible for cooking various food items according to standardized recipes. This role involves ensuring food quality, maintaining a clean and sanitary work environment, and effectively communicating with team members and management. The position requires a strong understanding of cooking techniques, food safety, and the ability to manage multiple orders efficiently in a fast-paced environment.

Requirements

  • High school diploma or GED equivalent required.
  • A minimum of two (3) years of cooking experience is required with an emphasis in one of the following specialty areas: short-order cooking of burgers, steaks, pastas, sandwiches, and breakfast items such as eggs and pancakes, etc.
  • ServSafe / Food Handler's Certification Required.
  • Must be fast and able to organize and manage up to fifty (50)-line order tickets at a time.

Nice To Haves

  • One (1) year of kitchen supervisory experience preferred.

Responsibilities

  • Leads a small team of line cooks.
  • Cooks, sautés, broils, grills, fries, steams, bakes, and wok cooks meats, pizza, fish, vegetables, and other foods according to the recipe at the correct temperature by regulating the temperature of ovens, broilers, grills, and roasters on Line and expedites orders.
  • Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
  • Sets up and maintains workstation for next shift.
  • Completes assigned station prep lists.
  • Inspects, cleans, sanitizes, and maintains food preparation areas, such as equipment, work surfaces, and serving areas, to ensure safe and sanitary food-handling practices.
  • Prepares, portions, garnishes food, and presents food items per Bingo kitchen standardized recipes.
  • Maintains waste, temperatures, and other health and safety logs/reports daily.
  • Effectively and consistently communicates on the production Line.
  • Maintains open communication channels with front-of-house and management staff.
  • Follows all sanitation, health, and safety procedures.
  • Performs other duties as assigned.
