About The Position

The Lead Line Cook is responsible for shift support and coordination in the Blue Heron kitchen at OSF. This includes the support and coordination of all F&BBOH team members on shift, appropriate integration with and support of all team members of F&BFOH, as well as every other department at OSF. The Lead Line Cook facilitates and participates in the preparation of meals through all facets of the kitchen operation, including bulk prep, line service, cleanliness and sanitation, storage and organization. The Lead Line Cook is accountable for ensuring that all necessary work is completed to provide a quality guest experience with correctly prepared food. The incumbent is responsible for modeling and acting in accordance with Ojo Caliente Holdings, Inc. Requirements

  • Advanced understanding of food preparation for both a la carte restaurant service and catered banquet services.
  • Knife skills advanced to the point of being able to instruct other team members in both capability and safety.
  • A sense of urgency in fulfilling guest needs, tempered by the mindfulness necessary to provide a guest experience that meets our standards of quality and excellence.
  • Consistent punctuality and reliability.
  • Demonstrated flexibility, adaptability, and willingness to assist where needed in support of the team and business needs.
  • Ability to work in an environment with frequent exposure to heat, steam, and noise.
  • Ability to stand for extended periods (up to eight or more hours), and to sit, reach, lift, bend, kneel, stoop, climb, push, and pull items weighing up to 50 pounds.
  • Valid New Mexico Food Handler Card, as required for employees who handle food, utensils, or food-contact surfaces.
  • Ability to work a flexible schedule, including days, nights, weekends, and holidays.
  • This role requires the ability to perform tasks requiring manual dexterity, auditory focus, and visual attention.

  • Due to the natural environment at Ojo Spa Resorts, all staff must be comfortable outdoors performing physical activities, and be able to navigate uneven ground, diverse terrain, multiple stairs, and be prepared to work in unpredictable weather conditions.

Responsibilities

  • Model, promote and train our Core Values to the F&BBOH team.
  • Provide clear guidance and expectations to F&BBOH team members in alignment with our Mission and Core Values and the direction provided by the Chef Manager or designee.
  • Ensure team members have the tools, resources, and support needed to meet established expectations.
  • Maintain a safe and stable environment in the kitchen so that team members feel secure in fulfilling defined expectations while they are working.
  • Support the training and development of all F&BBOH team members in alignment with the BOH Onboarding checklist, Core Values Kitchen Training, and any direction given by the Chef Manager or designee.
  • Complete any tasks at any station in the kitchen as required by the needs of the business.
  • Coordinate preparation, timing and execution for banquets and special events.
  • Monitor product freshness and facilitate the rotation of old product based on an established schedule.
  • Ensure full compliance with all food safety, sanitation, and health regulations, including federal, state, and local requirements, as well as company standards and protocols.
