Responsible for the preparation of food items according to specified standards, carrying out the policies of the department and company. This role involves assisting in all areas of kitchen production, maintaining proper sanitation, and stocking and rotating products. The position requires advanced knowledge of Asian food products and preparation, the ability to manage the kitchen in the absence of chefs, and knowledge of proper equipment handling, meat temperatures, and kitchen rotation. The Lead Cook must ensure the highest degree of sanitation and maintain a proper uniform at all times. Other job-related duties may be assigned, and the duties can be changed, expanded, reduced, or deleted to meet business needs.
