About The Position

Responsible for the preparation of food items according to specified standards, carrying out the policies of the department and company. This role involves assisting in all areas of kitchen production, maintaining proper sanitation, and stocking and rotating products. The position requires advanced knowledge of Asian food products and preparation, the ability to manage the kitchen in the absence of chefs, and knowledge of proper equipment handling, meat temperatures, and kitchen rotation. The Lead Cook must ensure the highest degree of sanitation and maintain a proper uniform at all times. Other job-related duties may be assigned, and the duties can be changed, expanded, reduced, or deleted to meet business needs.

Requirements

  • Intermediate knife handling skills.
  • Advanced cooking knowledge.
  • Basic math skills.
  • Written and verbal understanding of English.
  • Must be 18 years or older.
  • Sanitation certificate and/or serve safe license required.
  • Must be able to lift and carry up to 50 lbs.

Nice To Haves

  • Prior line cooking experience preferred with knowledge of wok cooking.

Responsibilities

  • Advanced knowledge of Asian food products and preparation.
  • Able to direct and lead the cooks and able to manage kitchen in the absence of the chef and sous chefs.
  • Able to maintain proper use, cleaning and handling of all equipment and product.
  • Can assist in any area of kitchen as needed.
  • Knowledge of Asian sauces, soups and other cooking preparations required.
  • Knowledge of proper meat temperatures required.
  • Knowledge of kitchen and storage rotation.
  • Must ensure the highest degree of sanitation is kept to at all times.
  • Must maintain proper uniform and nametag at all times.
  • Other job-related duties as assigned.
