About The Position

The Lead Cook is responsible for preparing special meals or substitute items, regulating the temperature of cooking equipment, and ensuring proper food portioning, arrangement, and garnish. This role involves maintaining food logs, monitoring food quality and quantity, and communicating with the Chef and service staff regarding food availability and specials. The Lead Cook also assists management with hiring, training, scheduling, and employee development, serving as a role model for the team. Adherence to company policies, safety procedures, and maintaining a professional appearance are crucial. The position requires anticipating and addressing guest needs, clear communication, and fostering positive working relationships. Physical requirements include standing, sitting, or walking for extended periods, reaching, bending, twisting, pulling, stooping, and lifting objects up to 25 pounds. A professional and pleasant demeanor with a focus on customer service is essential. The role requires flexibility in scheduling, including evenings, weekends, and holidays, and performing other reasonable duties as assigned.

Requirements

  • Stand, sit, or walk for an extended period of time.
  • Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
  • Move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance.

Responsibilities

  • Prepare special meals or substitute items.
  • Regulate temperature of ovens, broilers, grills, and roasters.
  • Pull food from freezer storage to thaw in the refrigerator.
  • Ensure proper portion, arrangement, and food garnish.
  • Maintain food logs.
  • Monitor the quality and quantity of food that is prepared.
  • Communicate assistance needed during busy periods.
  • Inform Chef of excess food items for use in daily specials.
  • Inform F-B service staff of 86'ed items and available menu specials.
  • Ensure the quality of the food items.
  • Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
  • Prepare cold foods.
