Requirements

  • High school education or equivalent.
  • One to two full years of employment in a related position with this company or other organization(s).
  • Advanced knowledge of the principles and practices within the food profession.
  • Experiential knowledge required for management of people and/or complex problems and food and beverage management.
  • Oral and written communication skills.
  • Moderate hearing to communicate with employees and to hear machinery for safety reasons.
  • Excellent vision for safety reasons.
  • Moderate speech communications to communicate with other employees.
  • Excellent comprehension and literacy to be able to read and write as well as analyze to fulfill budget.

Responsibilities

  • Supervise and manage the daily production, preparation and presentation of all food for the kitchen to ensure a quality, consistent product is produced which conforms to all franchise standards.
  • Supervise and manage human resources in the production and preparation areas of the kitchen in order to attract, retain and motivate the employees while providing a safe work environment; train, develop, empower, coach and counsel, recommend discipline and termination, as appropriate.
  • Schedule and supervise the maintenance/sanitation of the kitchen, equipment and related areas to ensure a healthy, safe work environment which meets/exceeds federal, state, corporate and franchise standards and regulations.
  • Monitor, analyze and control all labor and food costs; prepare the appropriate reports, charts and schedules to ensure budgets are met/exceeded while quality is maintained/improved.
  • Supervise and ensure the consistent preparation, production, handling, and storage of food in accordance with established recipes, portion standards, production guidelines, food safety requirements, and hotel SOPs.
  • Prepare food of consistent quality following recipe cards and production and portion standards, per dupe from servers.
  • Start food items that are prepared ahead of time, making sure not to prepare more than estimated needs.
  • Date all food containers and rotate as per the SOP, making sure that all perishables are kept at proper temperatures.
  • Check pars for shift use, determine necessary preparation, freezer pull and line set up.
  • Note any out-of-stock items or possible shortages.
  • Assist in keeping buffet stocked.
  • Return all food items not used on next shift to designed storage areas, being sure to cover/date all perishables.
  • Promote the Accident Prevention Program to minimize liabilities and related expenses.
