The following is a summary of the major responsibilities of the position. The Kitchen Supervisor ensures all prep items are prepared and stored to proper specifications. This role utilizes a hands-on approach to training and developing kitchen staff, instilling safety and sanitation habits, and teaching the importance of consistency in preparation and presentation. The supervisor possesses thorough knowledge of food handling and preparation techniques, ensuring quality, portion control, and plate presentation are consistently adhered to. They supervise daily food preparation, prep, stock, and rotate lines, and work closely with wait staff to exceed guest expectations. Responsibilities include preparing items on the prep list following standard procedures, maintaining high quality, inspecting food products, checking portion control, firing food for service, maintaining cooking times and temperatures, following storage procedures, and maintaining cleanliness of the work area and equipment to meet Health Department and EcoSure standards. The role also involves preparing food items according to standard recipes, visually inspecting and selecting food items, checking and controlling product storage, and keeping refrigeration, equipment, and storage areas clean and in working condition. The supervisor must have a good working knowledge of cooking fundamentals, ensure consistent line plating and quality, and perform other job-related duties as assigned.
