About The Position

This position oversees the inmate/detainee worker program in the kitchen. Responsibilities include training and orienting workers on duties, sanitation, and food preparation. The Kitchen Officer assigns daily tasks, supervises workers to ensure efficiency and timeliness, and provides direction and warnings as needed. The role involves preparing food according to departmental standards, recipes, and instructions, while adhering to housekeeping and safety practices. Key duties also include checking deliveries for accuracy and temperature, stocking food and supplies promptly, and managing kitchen inventory. This includes compiling weekly inventories, maintaining computer records, tracking physical stock, ordering supplies, and adjusting menus based on food costs.

Requirements

  • Graduation from an accredited senior high school or equivalent or GED.
  • Wage-earning experience in correctional, commercial, or institutional food preparation or food service management OR eighteen months of correctional custody or law enforcement experience.
  • Excellent verbal and written communication skills.
  • Excellent interpersonal and customer service skills.
  • Excellent organizational skills and attention to detail.
  • Excellent time management skills with a proven ability to meet deadlines.
  • Ability to function well in a high-paced and at times stressful environment.
  • Proficient with Microsoft Office Suite or related software.

Nice To Haves

  • Correctional or institutional food service experience preferred.
  • Correctional custody or law enforcement experience preferred.
  • Experience in the supervision of employees or offenders preferred.

Responsibilities

  • Oversees inmate/detainee worker program, including creating and implementing orientation forms, training, and assigning daily kitchen tasks.
  • Supervises inmates/detainees to ensure tasks are completed in an organized and timely manner, providing verbal direction and warnings when needed.
  • Prepares, assists, or instructs inmate/detainee labor in food preparation according to departmental standards, recipes, and work instructions.
  • Follows assigned facility housekeeping and safety practices in all aspects of food preparation, oversight, and serving.
  • Checks in deliveries, ensuring proper items are received in a timely manner and at correct temperatures.
  • Stocks incoming food and supplies in their proper places, prioritizing immediate stocking of frozen and perishable items, and all other items within an hour of delivery.
  • Compiles weekly kitchen inventory, records and maintains information in the computer inventory system.
  • Maintains a current physical inventory of all food and supplies that need to be ordered.
  • Orders groceries and other kitchen supplies.
  • Adjusts menu if needed due to increased cost of food.
