The Kitchen Manager is responsible for strictly adhering to and preparing meals according to the Armed Forces Recipe Service and the food preparation worksheet (NAVSUP 1090), including all recipe conversions. They ensure meals are served according to prescribed meal hours and assist in developing food cost and control, monitoring that the food budget remains within defined guidelines. The manager will prepare a variety of meats, poultry, seafood, vegetables, sauces, gravies, and baked goods using a full range of quantity cooking procedures. This includes preparing multiple menu items for a single meal, coordinating steps to ensure timely readiness, and handling special or difficult recipes. The role involves furnishing instructions, delegating responsibility for recipe adjustments, deciding when items are done, and recommending recipe improvements. During mealtimes, the manager checks food presentation, quantity, and timeliness, making emergency changes as needed. They are responsible for maintaining clean and sanitary work areas, equipment, and utensils, and ensuring proper safety precautions are followed by all employees and client trainees, reporting any failures to supervisors. The Kitchen Manager must ensure all Goodwill Industries and Naval policies and procedures are followed, and that supplies and food products are handled according to agency policies and good security practices. This role includes planning, assigning, and supervising the work of lead cooks, cooks, and vegetable preparation and butcher shop staff. Additionally, they will order food to meet menu requirements, plan work assignments, and inspect the workplace for safety and sanitary standards. Other duties may be assigned.
