Columbia Hospitality is seeking an exceptional individual to join our team as a Jr. Sous Chef at The Shed, located within The SOMM Hotel & Spa. This role works in tandem with the Sous Chef to maintain responsibility for the day-to-day operation of the kitchen, collaborating with the culinary team to develop and implement procedures, and ensuring all work practices meet or exceed established standards. The Jr. Sous Chef will communicate daily with leadership for updates and changes, maintain high standards for food quality, presentation, handling, sanitation, and safety, and follow all appropriate policies and procedures. This position also involves assisting in the selection, supervision, training, development, scheduling, evaluating, disciplining, and counseling of staff, demonstrating positive leadership characteristics, and monitoring food and labor costs. The role requires conducting daily walk-throughs of storage areas, utilizing specification sheets for preparation, preparing and supporting the creation of new menu items, ensuring attractive and consistent food presentations, and handling customer requests promptly. Responsibilities also include setting up, re-stocking, maintaining, and cleaning food preparation areas, ensuring presentation standards are met, reading and interpreting recipes, conducting product inventories, ordering and receiving product, and ensuring team adherence to grooming, sanitation, and safe food handling standards, as well as managing all opening and closing kitchen procedures.
