About The Position

The Department of Health and Human Performance at East Texas A&M University invites applications for a one-semester Instructor (Non-Renewable) faculty to teach undergraduate courses in nutrition and related areas, including food preparation, food science, and foundational nutrition topics. This full-time position includes both in-person and online teaching and emphasizes engaging, applied learning experiences that prepare students for careers in nutrition and health. Requirements

  • Master’s degree or higher in Nutrition, Dietetics, Public Health, or a related field
  • Demonstrated potential for effective undergraduate teaching, for example in classroom, nutrition education, counseling, or community-based education

Nice To Haves

  • Registered Dietitian Nutritionist (RDN) credential
  • Familiarity with ACEND accreditation standards
  • Teaching experience in higher education or training settings
  • Experience with in-person and online instruction
  • Strong communication and interpersonal skills
  • Ability to translate complex nutrition concepts into clear, engaging instruction

Responsibilities

  • Teach five undergraduate courses in nutrition, including food preparation, food science, and core nutrition topics in either face-to-face or online formats as assigned
  • Develop and deliver course content that aligns with program and institutional learning outcomes
  • Create engaging, student-centered learning environments that incorporate real-world and applied experiences
  • Assess student learning through assignments, exams, and/or projects, and provide timely, constructive feedback
  • Maintain accurate records of student progress, attendance, and grades in accordance with university policies
  • Utilize the learning management system (e.g., D2L) to support course delivery and communication
  • Hold regular office hours and provide academic support and mentorship to students
  • Participate in curriculum development, program assessment, and departmental meetings
  • Collaborate with faculty and staff to support student success and program initiatives
  • Support recruitment, retention, and outreach efforts for the nutrition program as needed
  • Perform other duties as assigned by Department Head.
