This position is responsible for recognizing, evaluating, and making dispositions for wholesomeness of whole birds and visceras prior to the USDA inspection. The sorter is assigned a range of tasks according to which position they staff on the line. Some of those tasks include recognizing, removing, and discarding systemic diseased birds and/or viscera packages, removal of parts due to disease and contamination, removing birds from the line for reprocessing due to defects, and assisting with other jobs as directed by supervision as necessary. Trimming disease and contamination from the product as necessary. Sorting for wholesomeness of a food product is a job with great responsibility. It is important that individuals in this position understand thoroughly the tasks assigned. Due to learning multiple positions and tasks the learning curve for this job may be increased.
