About The Position

Mangiare is a small, independent Italian restaurant in downtown Green Bay, focused on fresh, high-quality ingredients and an Italian-region wine list. The kitchen crew consists of 5-6 people. This role involves ordering product, cooking during dinner service, and managing inventory to meet food cost targets. The menu is simple, seasonal, and ingredient-driven, emphasizing clean execution and quality.

Requirements

  • 3+ years in a lead kitchen role (Sous Chef, Head Chef, Chef de Cuisine, or Kitchen Manager) in a scratch, full-service restaurant.
  • Italian or Mediterranean experience preferred.
  • Strong sourcing instincts, knowledge of quality ingredients, and vendor relationships.
  • Proven track record placing orders to par, running weekly inventory, and hitting food-cost targets.
  • Hands-on leadership style with the ability to teach, correct, review performance, and make hiring/termination decisions.
  • Current ServSafe Manager certification (or willingness to obtain within 60 days).
  • Availability Monday–Saturday evenings and holidays.
  • Ability to stand for 10+ hours, lift 50 lbs, and work in a hot kitchen environment.

Responsibilities

  • Order product, including owning vendor relationships, sourcing quality ingredients, placing orders to par, and inspecting deliveries.
  • Cook during every service, working the line (sauté, grill), expo, and plating.
  • Manage inventory by counting incoming and outgoing product and stock to meet food cost targets.
  • Build a simple, focused, seasonal, and ingredient-driven menu with the owner that is executable in a small kitchen.
  • Butcher and portion proteins in-house.
  • Hire, train, schedule, and develop a 5-6 person BOH crew.
  • Conduct performance reviews and handle corrective actions and terminations.
  • Run daily line checks and pre-shift meetings.
  • Maintain sanitation, food safety, and health-code compliance.
  • Keep the kitchen clean and in working order.

  • Salary: $55,000 – $65,000, based on experience.
