About The Position

Lora Bay is seeking a dedicated and enthusiastic Food Truck Cook/Commis Chef to join our culinary team in Thornbury. This Back of House position is primarily based in our Food Truck operation, where you will help deliver high-quality food and exceptional service in a fast-paced outdoor dining environment. From time to time, the successful candidate may also provide support within the Clubhouse kitchen, offering valuable exposure to a broader culinary operation. Chef Mark’s insights shape our menus, refine our kitchen operations, and elevate our service, ensuring every dish reflects culinary mastery. This collaboration also provides our kitchen team with hands-on training, fostering growth and skill development under industry-leading mentorship. Reporting to the Junior Sous Chef, Sous Chef, and Executive Chef, the Line Cook/Commis Chef plays a key role in the kitchen’s daily operations by assisting with food preparation, maintaining cleanliness, and ensuring smooth service execution. This is a full-time position starting as soon as possible through October.

Requirements

  • High school-level English communication skills
  • 2-3 years of experience in a kitchen
  • Ontario Smart Serve certification required
  • Strong ability to work efficiently in a fast-paced, high-pressure environment
  • Demonstrates a high regard for health and safety, consistently following safe work practices and procedures
  • Comfortable working in varied kitchen settings, including: Indoor and outdoor kitchens in a high-heat environment, Fast-paced industrial kitchens with open flames, deep fryers, and grills
  • Physical ability to: Stand up to 90% of the shift, Lift up to 50 lbs., Work with sharp knives, hot equipment, and liquids, Occasionally kneel, push, or pull kitchen equipment.
  • Work varied shifts, including evenings, weekends, and holidays
  • Must be legally entitled to work in Canada. International applicants require a valid work permit.

Nice To Haves

  • Enrollment in culinary courses is an asset
  • Food Handler Safety Certificate preferred

Responsibilities

  • Review daily productions with Head Chef and Sous Chef
  • Responsible for prepping and cooking food to meet club standards and in a timely manner
  • Restock food items throughout the shift and at the end of each shift
  • Work closely with the FOH (Front of House) team
  • Ensure all Health and Safety rules are applied and respected (especially HACCP)
  • Ensure workstations are kept tidy and presentable at all times
  • Ensure thorough cleanliness of all work areas
  • Assist with inventory when required
  • Maintain full awareness of and strictly observe Health & Safety and fire procedures
  • Maintain full awareness of and comply with all company rules and regulations
  • Comply with all tipping and gratuity policies and procedures
  • Other duties as assigned
