About The Position

This role involves overseeing an inmate/detainee worker program within a correctional facility's kitchen. The responsibilities include creating and implementing orientation forms, training inmates/detainees on their duties, including sanitation and hand-washing, and assigning daily kitchen tasks. The worker supervises inmates/detainees to ensure tasks are completed efficiently and in an organized manner, providing verbal direction and warnings as necessary. The position also requires preparing food, assisting, or instructing inmate/detainee labor in food preparation according to departmental standards, recipes, and instructions. Adherence to facility housekeeping and safety practices during meal preparation, oversight, and serving is crucial. Additionally, the role involves checking in deliveries for accuracy, timeliness, and correct temperatures, stocking food and supplies promptly, and maintaining an accurate weekly kitchen inventory. This includes recording information in a computer inventory system, maintaining a physical inventory for ordering, placing orders for groceries and supplies, and adjusting menus if food costs increase.

Responsibilities

  • Oversees inmate/detainee worker program.
  • Creates and implements orientation forms.
  • Trains and orients inmate/detainee workers in their required duties, including proper sanitation and hand-washing procedures.
  • Assigns daily kitchen tasks to inmates/detainees.
  • Supervises inmates/detainees to ensure tasks are done in an organized and timely manner.
  • Delivers verbal direction and warnings when needed.
  • Prepares, assists, or instructs inmate/detainee labor in the preparation of a variety of food items in accordance with departmental work production standards, standardized recipes, and work instructions.
  • Follows assigned facility housekeeping and safety practices in all preparation, oversight, and serving of correctional facility meals.
  • Checks in deliveries, ensuring proper items are delivered in a timely manner and food comes in at the correct temperatures.
  • Stocks incoming food and supplies in their proper places.
  • Stocks all frozen and perishable items immediately upon delivery.
  • Stocks all other foods and supplies within an hour of delivery.
  • Compiles weekly kitchen inventory.
  • Records and maintains information in the computer inventory system.
  • Maintains a current physical inventory of all food and supplies that need to be ordered.
  • Orders groceries and other kitchen supplies.
  • Adjusts menu if needed due to increased cost of food.
