Requirements

  • Graduate of a college or university with a bachelor's degree with courses in food preparation, food management or a related area.
  • Must have two years of experience in the operation and management of institutional, military or commercial food service operations.
  • Experience in one of the above areas will substitute for the education on a year-for-year basis.

Responsibilities

  • Plans, organizes and manages the Food Service Operation of a small facility within the Department of Juvenile Justice.
  • Provides on the job training programs in the areas of sanitation, food preparation, storage, personal hygiene, meal service, use of recipes and the cycle menu.
  • Maintains accurate records pertaining to the food service operations to include numbers of meals served, food costs, inventory, cycle menu, menu substitutions, etc.
  • Attends department meetings, institutional meetings and trainings as required.
  • Makes routine checks of all kitchen equipment.
  • Applies and enforces departmental rules, regulations and policies.
