About The Position

Under direct supervision of Assistant Dining Facility Manager and Dining Facility Manager, the Food Sanitation Specialist Leader (FSSL) directly supervises and coordinates the work activities of Food Sanitation Specialist (FSS) employees in the dining facilities. This is a working supervisory position responsible for maintaining good housekeeping practices for the dining facility.

Requirements

  • High school diploma or GED
  • Excellent written and verbal communication skills.
  • One-year supervisory experience
  • Ability to lift and carry up to 50 pounds.
  • Ability to stand and move within the kitchen area for 6 to 7 hours (Excluding break and lunch periods).
  • Ability to bend and stoop for job duties.
  • Ability to climb ladders for cleaning kitchen hoods.

Responsibilities

  • Directs and assigns Food Sanitation Specialists in cleaning, sweeping, and mopping of floors, cleaning of woodwork, walls, windows, tables, counters, kitchen and serving equipment.
  • Oversees the washing of dishes, glasses, silverware, cooking vessels and utensils.
  • Manages bussing services as required and ensures condiments and napkins are refilled.
  • Handles trash removal to disposal area and cleaning restrooms, entrance areas and back dock of dining facilities.
  • Assists with unloading subsistence and supply trucks, procuring storage from storeroom or refrigerators as requested.
  • Monitors Pot & Pan water temperatures to ensure correct temperature.
  • Ensures dishwasher is put together correctly, dispensing detergents, and maintaining the correct temperature.
  • Assigns and monitors breaks for FSS.
  • Conducts Cook mounts and safety briefing before the start of each shift.
  • Counsels FSS as warranted and evaluates FSS to ensure they stay within job and training compliance.
  • Ensures 10 feet surrounding dumpster/dining facility at the start of each scheduled meal serving period is free of trash, cigarette butts, food waste, and any foreign matter.
  • Monitors and dispenses cleaning chemicals.
  • Provides On the job training (OJT) to personnel and conducts monthly counseling on employees.
  • Orders supplies as required to perform daily duties.
  • Assures mop and broom area equipment is stored properly.
  • Keeps and documents inventory on cleaning supplies daily.
